The 2019 ‘Fieldie’ is a must ferment Sauvignon Blanc Semillon blend.

This is a skin contact white wine. Basically, it is a white wine, made in the style of red wine. We chose to make a skin contact wine like this to continue our focus on producing food paired wines. Skin contact white wines are fantastic food wines, and show off other qualities of the grapes and terroir and winemaking than non-skin contact white wines.

The Sauvignon Blanc and Semillon grapes are sourced from our organically grown Wallcliffe Vineyard. Handpicked with friends from 40 year old vineson the eve of the harvest moon equinox on the 21st of March 2019.

The ‘Fieldie’ is a co-ferment of Sauvignon Blanc and Semillon grapes from our organically grown Wallcliffe Vineyard. Handpicked with friends from 40 year old vines on the eve of the harvest moon equinox on the twenty first of March 2019. This is a wild, open fermented blend of fruit with 1 to 5 days of skin contact before being pressed to neutral French oak barriques and matured on lees for 6 months. This wine is unfined and coursely filtered so some traces of harmless residue may remain in the bottle.

In a glass this wine is a light yellow.

The palate presents as a skinsey, textural wine with notes of ginger, lemon peel and herbs and a balanced level of acidity and saltiness on the finish.

We aim for minimal intervention to let the fruit express itself, yet there are certain things we do need to maintain the quality and integrity of this wine. We’ve added minimal sulphites to stabilise the wine and ensure its shelf life.
